How does hardwood charcoal differ from charcoal briquettes?
Hardwood charcoal is pure charred wood, baked without oxygen (so it doesn't burn) to remove water, tar and
volatile compounds. As the charred wood that remains is primarily carbon, it produces the lowest emissions
and least ash residue of the wood fuels.
Charcoal briquettes are a compressed mixture of powdered charcoal, sawdust and up to 60% fillers, including
anthracite coal from coal mines, limestone to create white ash, borax and starch for binding, sodium nitrate
and a petroleum coating for quicker lighting.
How do the coals compare for cooking?
Hardwood charcoal burns hotter and lasts longer with even heat distribution. The hotter coals sear the food,
sealing in natural juices for superior flavor and healthier meals. goodwood mesquite charcoal is ready for
cooking in 15-20 minutes after lighting the bag. Spread the coals evenly over the area where you want the most direct
heat. The coals will burn for approximately 2 hours, leaving little ash residue. Unburned charcoal can be used
again by closing the grill and vents to extinguish the coals and using wadded-up paper to restart.
Charcoal briquettes do not get as hot as other fuels, so you need to use more of them. The lower temperature
will tend to dry out and toughen grilled foods and impart a distinct oily fuel smell that can adversely affect
the taste. When the coals are ready, more briquettes will need to be added every 45 minutes. The pile of
residue that remains at the bottom of the grill is a result of the filler ingredients.
Why mesquite?
Mesquite hardwood charcoal is the executive chef's preferred charcoal for grilling, adding a subtle, sweet
smokey flavor to meats and vegetables. It is very responsive to changes in oxygen levels, making it easier to
regulate its temperature. Our mesquite is a preferred renewable resource as only the already-dead wood is
harvested by our supplier in Baja, Mexico certified for environmentally-responsible management practices.
How much food can be cooked using goodwoodmesquite charcoal?
The amount of charcoal needed depends on the size and type of grill and the amount of food to be prepared.
Winds, very cold temperatures or high humidity increase the amount needed for a good fire. The heat output
from one bag of goodwoodmesquite charcoal is comparable to a 10-lb. bag of briquettes, a perfect
amount for 5-15 people.
What about the jute fiber and the soy wax?
goodwood mesquite charcoal is a 100% pure, all natural package. We use jute - a tree-free fiber that has
similar burning characteristics to paper - a 100% biodegradable cornstarch liner, and an edible, all-soy wax -
the cleanest-burning of the vegetable waxes - to ignite the pure, all-natural charcoal. The bags and soy are
burned off in the first few minutes, never interfering with the subtle flavor of the mesquite.
